- 150g Dan & Monstro Pasta Sauce
- 150g pasta
- ½ courgette, diced
- ½ red onion, diced
- 1 garlic clove, crushed
- ½ lemon zest
- 6 cherry tomatoes, quartered
- 50g feta cheese
- 2tbs Olive Oil
- Fresh basil
Prep time: 5 Minutes
Cook time: 12 Minutes
Boil the pasta according to the instructions on the packet.
In a separate pan add 1 tbs olive oil to a pan, add in your onions. Keep on a medium heat and allow the onions to sweat down for a few minutes.
Once the onions begin to become translucent add in the diced courgette and crushed garlic. Cook for 2 – 3 minutes together with the onions and then add the pasta sauce, bring to a simmer.
Once the pasta is cooked, drain and add to the sauce along with the lemon zest, cherry tomatoes, chopped basil and remaining olive oil. Stir to combine
When serving sprinkle with the crumbled feta cheese. Enjoy
