400g of quality Steak Mince
1 Pouch of Mexican Style Sauce
Small can of Red Kidney Beans
Little diced onion , red pepper , celery ( all optional)
( little diced chili if you want the chili spicy )
Beef stock ( I just crumble in 1/2 a beef stock cube and add a little water )
Serve with Rice
In a pan with a little oil , sauté some,onions,peppers ,celery ( chili )until soft.
Add in mince and stir until brown and cooked.
Pour over pouch of sauce , stir for about ten minutes.
Add stock cube , a little water put lid over pan, simmer for another 10 minutes.
Add kidney beans and give a good stir.
Cover pan and let simmer for another few minutes.
Season to your taste and serve over some boiled fluffy rice.
Garnish with fresh coriander…delicious
Great to cook a day in advance to really let the flavors come through.
Also you can use this chili in a burrito or taco…add some grated cheese and place in the oven for 10 minutes.
Also perfect for Nachos..
Spread some tortilla chips on a baking tray.
Add a few generous spoonfuls of your chili mix, grate some cheddar cheese over the top and place in a hot oven for a few minutes until the cheese is melted.
Serve with Sour Cream, Salsa & Guacamole.
I personally love to add some red Jalapeños and a sprinkle of finely diced coriander.
